    Mix together flour, sugar, yeast and salt. Then slowly add the oil and water, mixing until dough comes together. Continue kneading for around 8 minutes, if dough feels too sticky sprinkle a bit more flour. Leave dough to rise in greased container for 1-2 hours under a damp cloth.

    Heat olive oil in a pan and fry the onion and fennel until golden. Then create a small circle in the middle and pour more olive oil, add minced garlic, pepperoni and herbs. Peel and cut the Aubergine into small pieces and add to pan. Finally add diced tomatoes and tomato paste.

    Set oven to 175c

    Once the dough has risen and the filling is cooked, cut the dough into 4 or 3 balls (depending on the braiding style you plan for the Challah). Roll out each ball and place the stuffing in a strip in the middle. Fold gently and set aside.

    Braid the strips and roll into a circle (you can also leave it straight if you prefer).

    Bake for 40-55 minutes at 175 degrees (depending on the strength of your oven).

    Once you stick a fork in the middle and it comes out smooth, take it out and enjoy 😍
